Slow cooked for fourty hours, this deceptively simple, but flawless dish presented by Head Chef Brian Geraghty had absolutely sublime texture and balance of flavour. The old adage that less is more was certainly emphasised by this well executed dish that was featured as part of the degustation menu. After much deliberation, it was also my dish of the year for 2012.
