Anthony Sorbello - Leanne Lattouf - Ross SchinellaThe Schibello Caffé brand is bonded and forged through the meaning and values encapsulated in those three significant words. The Schinella and Sorbello families, richly steeped in the traditional joys of Italian heritage, combined their love and vast knowledge of coffee to form one single brand and destiny. To celebrate its first fifteen years, Schibello Caffé has launched its new Research and Development Roasting Laboratory in Rhodes. It comprehensively covers all aspects of coffee production, from the humble bean, right through to the cup. The depth of this commitment is only fully realised by a tour of this impressive facility.

Faema E61The original Schibello blend, was mild and smooth in profile, but importantly still retaining all the heady aromatics, depth of flavour and intensity that one traditionally identifies with Italian espresso. It subsequently developed into a diversity of blends, that is currently used in more than 2,000 cafes and restaurants. It has also developed a range of Bellòro coffee capsules, for both the domestic and corporate markets, that are Nespresso compatible.

RoasterThe 100% Arabica beans sourced from the finest plantations in Columbia, Ethiopia, Papua New Guinea, Brazil, India, Sumatra and Bolivia are all roasted at Rhodes. This ensures not only consistency in the various blends, but maintains quality control and traceability  down to each single batch processed, which directly translates into the excellence found within the cup. The primary roasting machine not only has the ability to maintain temperatures with  great accuracy, but also provides a computer analysis of the roasting profile. Any batches that do not meet the absolute satisfaction of the Head Roaster are discarded, so the product the customer receives is not compromised, and is as close to the established profile of the blend they are purchasing.

The outstanding Rhodes facility also has a dedicated roasting laboratory for  developing potential profiles of future blends in smaller batches, for tasting and consideration, prior to commercial production.  A cupping room, replete with boutique Training Roomroaster, allows a more detailed evaluation into the flavour profiles of beans. This allows Schibello, not only to make assessments for their own portfolio, but also provides options for developing new customised blends for its customers upon request. The adjacent training academy offers extensive barista education on both a theoretical and practical level, with state of the art equipment and technology to ensure the skills acquired can be immediately applied. There is even a full maintenance and repair wing, for its expanding client base.

Next Door by Schibello, a brand new shopfront espresso bar, offers two blends from the extensive range of signature, boutique, and single origin roasts, that are alternated regularly. It also allows customers to purchase products from the entire Schibello range, Schibello Cafeincluding those from  its  endorsed partners. The Paddington Tea range, one of my favourites, is also available. Clearly, Schibello has made not only a massive investment in the future of its own company, but also for that of coffee in Australia. The next fifteen years promise to be even more exciting than its first, with culture, passion and tradition underpinning that journey every step of the way….
